I make my own Shake-N-Bake mix from foods I would have otherwise thrown away. Whenever I get to the bottom of the bag on items like dry stuffing mix, various snack chips, crackers, etc. I set them aside. There are usually crumbs, broken pieces, not enough for a full serving or they could be slightly stale. Then when I’m ready to make pork chops, chicken or fish I dump these leftovers into my blender and grind it to a medium fine crumb. I then coat my meat and cook just like I would for store-bought Shake-N-Bake.
Any leftover crumbs can be stored in an air-tight container to use next time I make a casserole, meatballs …
