It seems as if whenever I buy a bunch of fresh herbs I end up throwing out at least half of the bunch because it spoils before I can use it all up.
Here are some ways I’ve found to use my herbs before they spoil:
- add to salads – this works well with green salads, potato salad, pasta salad …
- sprinkle over pasta, casseroles, soups, rice dishes
- chop and freeze in ice cube trays with broth or water to cover
- add to sauces
