Saving Herbs

It seems as if whenever I buy a bunch of fresh herbs I end up throwing out at least half of the bunch because it spoils before I can use it all up.

Here are some ways I’ve found to use my herbs before they spoil:

  • add to salads – this works well with green salads, potato salad, pasta salad …
  • sprinkle over pasta, casseroles, soups, rice dishes
  • chop and freeze in ice cube trays with broth or water to cover
  • add to sauces
