I love cucumbers but often they go bad before I can eat them all. A simple way to keep the cucumber fresh longer, with the added bonus of having them ready to eat when I want them, is to peel (you don’t have to peel them for this to work so if you prefer the skins leave them intact) and slice the entire cucumber. Place the slices on top of a paper towel (in the IA kitchen it’s a small square of fabric that I keep in my towel drawer to use in place of paper towels) in a plastic container with a sealing lid. Place another towel on top of the slices and close the container. The towels absorb the moisture that causes the cucumber to rot so quickly. The taste is great, and I can keep the cucumber slices “fresh” for a week if necessary, maybe longer!

Another way to stretch the life of cucumbers is to slice them and add to left-over pickle juice. A two for one recycle tip, if you will.
